概要

The course is a practicum in urban sociology through the lens of food, using Tokyo as a field site. The focus will be on eating out, particularly commercial eateries, using these as a window onto urban foodways, culinary infrastructure, and the urban food system. Course discussions will examine the rise of an industrial urban food system, commercial culinary infrastructure, the formation of lively restaurant scenes, street vending, drinking streets, migrant foodways, and culinary imaginaries in contemporary urban popular and consumer cultures. Field trips, observational exercises, and fieldwork supplement classroom work. A core part of the course will be group projects focused on fieldwork in a particular Tokyo neighborhood. (The theme this semester is migrant foodways, so projects are expected to engage with migrant foodways.)

Students will learn about the history and social organization of urban foodways while also developing their qualitative sociological research skills.
